Shrimp Creole

One of the easiest and most classic dishes from my family. It literally takes less than 10 minutes, and only a few ingredients.

shrimp creoleIngredients:

1/2 cup chopped bell pepper
1/2 cup chopped yellow onion (can use purple, too)
1/2 cup chopped celery
1-2 cloves minced garlic (fresh or jarred)
1 lb peeled shrimp
1 can diced tomatoes
pepper, salt, Cajun seasoning, hot sauce
2 cups cooked rice

Directions:

1. Saute’ the vegetables with some oil (vegetable is fine, olive oil is healthier) for a few minutes until wilted.
2. If the shrimp is uncooked, add those in, cook for 3-5 minutes. If already cooked, add just before you add the tomatoes.
3. Add can of tomatoes, season.
4. Serve over rice.

Serves 4, easy to cut in half or double as necessary.
